Antonovka jam through a meat grinder is the most common and simple method of preparing this dessert for the winter. These apples have a dense texture, good sourness and the jam from them, thanks to natural pectin, always turns out thick, and there is a lot of it under the skin of the apple, so there is no need to peel Antonovka. There are a lot of recipes for jam through a meat grinder: "Amber" with triple cooking, and with steaming apples, and baked jam, and with the addition of citrus fruits and plums, even pumpkin.

First, let's prepare a simple set of products for cooking jam. We choose Antonovka undamaged by rot, otherwise the taste will be spoiled, and small specks on the peel are not a problem.

Rinse the apples well with cold water, cut them into pieces without removing the peel and remove the seed pods.

Then we twist the chopped Antonovka into a meat grinder, setting a fine grate, and immediately into a saucepan for cooking jam.

Pour the amount of sugar indicated in the recipe to this apple mass. It can be changed, but for jam it should be less than 0.5 kg per 1 kg of apples. Mix everything well and leave for 2 hours at normal home temperature. Then bring the jam over medium heat to a boil and cook for 10 minutes with constant stirring.

Turn off the fire and leave the jam to infuse for 10 hours.

After 10 hours, we re-cook the jam for another 15 minutes, and give another 10 hours for infusion.
