Sort the hawthorn berries carefully, removing small twigs, sepals and stalks so that this garbage does not end up in the finished jam. Then rinse the berries well with cold water and discard in a colander to remove excess liquid.

Pour the prepared berries into a saucepan for cooking jam, pour a glass of clean water to them and add the calculated amount of sugar.

Put a saucepan with hawthorn berries over medium heat and bring to a boil. Remove the foam from the surface of the boiled jam. Then cook the jam over low heat until it becomes thick. It's about 1 hour. Stir the jam periodically with a wooden spoon. At the end of cooking, add lemon juice or 2 pinches of citric acid to the jam.
