Wild pear jam for the winter

If fresh wild pears are not very tasty - they are sour and astringent, then in the form of jam they noticeably win in taste over their varietal counterparts. We suggest making jam from them - sweet, thick, with a subtle hint of lemon.

We thoroughly wash pears from contamination. Discard fruits with defects.

We remove the stalks, cut out the seed pods, cut the pulp into pieces.

Scald the chopped pears with boiling water. Then spill it with cold water. We repeat twice, then let the water drain.

In a bulky dish, cook the syrup from the specified amount of water and granulated sugar. When the syrup boils, we immerse the prepared pears in it, mix and leave for a day to soak.

After the specified time has elapsed, bring the jam to a boil and boil for five to ten minutes. Remove from the stove and let it brew for ten to twelve hours.

After that, bring to a boil again, cook for fifteen to twenty minutes. We puree hot pears with syrup using a blender.

Return the resulting puree to the cooking container and bring to an active boil. We wash the lemon, cut it into pieces and remove the seeds. Puree with a blender. Put lemon puree in the jam, mix, boil for five minutes. We put the finished hot jam on sterilized dry jars and tighten with dry sterile lids. After cooling, we remove the jam for storage in a cool place.
