Apples of the summer variety "White filling" are ideal for making jam, because they have a loose texture and quickly boil down to a puree state, and besides, these apples are quite sweet, so a lot of sugar is not added to the jam. Overripe fruits are also suitable for jam. The cooking time determines the thickness of this dessert, and this can be adjusted as you like.

Rinse the apples well under running water, remove the peel, remove the seed pods and then cut into pieces of any shape and size.

Be sure to weigh the chopped apples and place them in acidified water so that they do not darken. Then transfer this slices to a jam pot.

Pour a glass of clean water to the apples and bring to a boil over high heat. Cover the saucepan and simmer the apples over low heat for 15–20 minutes. During this time, the "White filling" will almost dissolve. At this stage, you can add cinnamon or lemon zest to the apples, according to your taste.

Then cool the boiled apples a little and puree with an immersion blender or grind on a sieve.

Pour the calculated amount of sugar into the resulting applesauce, pour the lemon juice and cook over low heat for 30 minutes, stirring occasionally with a wooden spoon. The jam should be boiled by 25%, and for greater density, you can cook it longer.

When cooking, apple jam has a bad property - it “shoots” strongly with hot drops, so cover it with a special lid so as not to burn yourself. You can check the readiness of the jam by dropping it on a saucer.

Pour it hot into dry sterile jars, seal it tightly and, after cooling, transfer it to a storage location.
