Even with proper nutrition, you can include baked goods on the menu. It's just that the products must also be "correct": we exclude an abundance of fats, sugar and premium wheat flour. Instead, we use honey, moderate amounts of vegetable oil, and healthier flours. In this recipe, we suggest using rice: it does not contain gluten and is rich in protein. These muffins cook very quickly. It is convenient to prepare them for breakfast, as well as when an urgent dessert is required.

We divide the eggs into whites and yolks. We only use proteins for muffins. Pour them into a bowl and whisk them until they become liquid foam. Then pour in olive oil and add honey. With a whisk, mix all the ingredients until smooth.

Put peeled bananas into the resulting liquid mixture and crush them with a fork, while mixing with the protein mass. You do not need to try to grind them into a homogeneous puree. Small pieces should remain, which will give the muffins an interesting texture.

It is important to mention that bananas should be very soft, fully ripe or overripe. Fruits that have already begun to appear with black dots on the peel are perfect. Unripe, firm banana flesh will not give the desired texture, sweetness, and flavor.

Sift the rice flour along with the baking powder and add to the bowl to the banana protein mass. Stir the dough with a whisk until relatively smooth. We carefully break all the flour lumps.
