The pancakes made with this recipe are gluten-free and dairy-free. This is because oat flour is used, and instead of traditional milk, we suggest adding mineral carbonated water. It is thanks to her that pancakes are obtained with holes.

Pour oatmeal in the specified amount into a large bowl. Fill with sparkling mineral water. Mix everything thoroughly together with a whisk so that there are no lumps left. Let the mixture stand for fifteen to twenty minutes.

While the flour mixture is infused, beat the egg and salt in a separate small container. It is enough just to mix the protein with the yolk until smooth. Pour the resulting egg mass into the flour mixture, mix until smooth.

Heat the pan with a non-stick coating on the stove until hot. Lubricate with a small amount of vegetable oil using a silicone brush. Measure the dough with a ladle and distribute it evenly over the surface of the pan. Fry pancakes on medium-low temperature until golden brown. Using a flat spatula, turn over to the other side and fry until golden brown.
