We present to your attention a great recipe for gluten-free pancakes with rice flour. They will come more than ever, by the way, for supporters of proper nutrition and for people who follow a gluten-free diet, but love to feast on pancakes. These pancakes can be served with different fillings: sweet and fruit, as well as with meat, fish and vegetables. With all of them, they are equally excellent!

Pour milk into a deep bowl and break the eggs. Beat until foamy.

Next, add the rice flour, salt and sweetener. Put the sweetener depending on the filling. If it is not sweet for you, then the sweetener can be omitted. Beat everything again with a whisk so that there are no lumps.

Then add coconut oil to the dough, it perfectly complements the pancakes with its taste. If you add solid butter, then you must first melt it a little. Mix all the ingredients well again.

By consistency, we got a batter. The main thing is not to overdo it with flour, otherwise, we will get pancakes.

Put the pancake pan over medium heat and heat. We use a non-stick pan, so we won't use oil when frying pancakes. Moreover, it is contained in the test. Pour half a ladle of dough into a preheated pan, distribute it in a thin layer over the pan and fry the pancake until golden brown. Then turn it over to the other side and fry for about a minute. Thus, we fry all the pancakes.
