We offer you a recipe for the most delicate ricotta cheesecake for lovers of proper nutrition. Light as a cloud, creamy and so healthy, it just melts in your mouth! The texture of this cheesecake is so airy and soft that when you cut it into pieces, you will hear the sound of air bubbles bursting.

Pre-cool the eggs in the refrigerator for a couple of hours. Separate the whites from the yolks. Beat the whites with a mixer until stable peaks.

Add yogurt, yolks, cornstarch, sweetener and vanillin to the ricotta. Beat everything well with a blender until smooth.

Gently add the proteins to the cheese mass and mix with a silicone spatula from bottom to top.

Put the dough in a baking dish lined with parchment. Spread the dough on top with a spatula and set the cheesecake to bake at 150 degrees for 45-50 minutes. Take the finished cheesecake out of the oven and let it cool slightly.
