It is important to choose the right ingredients in order to end up with a wholesome, healthy meal that will not be heavy on the stomach and will only benefit. We offer to cook carrot muffins, the recipe of which is based on the above principle.

To prepare the dough, break the egg into a bowl, add honey, cinnamon and a pinch of salt. Mix the components with a whisk until completely homogeneous. Then pour in vegetable oil and skim milk, mix again. We wash the carrots, dry them and peel them. We rub the root vegetables on a fine grater and add to the prepared liquid mass, mix.

Pour flour sifted together with baking powder on top of the egg-carrot mixture. Knead the dough of medium thickness. If the mass seems to be too thick, you can add a little more skim milk.

Put the prepared dough into silicone muffin molds. It is not necessary to lubricate such forms. We put them on a wire rack or baking sheet and transfer them to an oven preheated to 180 degrees to the middle level. Bake the muffins for about forty minutes, until they are well browned. You can also check the doneness by sticking it into one of the cupcakes with a toothpick. If it came out dry, without traces of damp dough, the products are ready.

We take out the muffins from the oven, cool slightly. Then we free them from the molds so that the condensate does not soften the crust. You can serve baked goods warm or already cooled down.
