If you are very fond of baking, but at the same time watch your diet and shape, use my recipe for diet whey pancakes. The recipe is simple and quick to prepare. The pancakes are tender, tasty and healthy. Be sure to cook it and you won't regret it!

First of all, prepare a deep container. And then sift the required amount of rice flour into it along with the baking powder, add the sweetener to taste. It can be a sugar substitute, honey, chicory or Jerusalem artichoke syrup. I used Prebio Sweet sweetener.

Remove the serum from the refrigerator and warm it up a little in a water bath or in a microwave oven until warm. Pour into dry ingredients gradually. Mix thoroughly using a whisk or mixer until smooth and uniform.

Leave the dough to rest for 5-10 minutes. The dough will turn out to be quite liquid, but do not let this scare you, it should be so.

Heat a heavy-bottomed skillet well over moderate heat. Using a tablespoon or ladle, carefully place the dough at a short distance from each other.

As soon as the edges of the pancakes are well browned and the dough thickens on top, use a silicone or wooden spatula to turn the pancakes over to the other side and cook until golden brown. Put the finished pancakes on a serving dish or plate and serve in portions, serve low-calorie syrup or natural yogurt if desired.
