A recipe where calories are kept as low as possible. The absence of sugar, eggs and milk will practically not affect the taste of the finished dessert, and the filling of cottage cheese and natural berries will be very useful.

Put the butter in the freezer for 5-10 minutes, then grate on a coarse grater. Mix the flour and baking powder in a deep bowl and add the grated butter. Grind the ingredients with a fork until crumbled.

Then add salt, sweetener and sour cream and knead to a soft dough. Depending on the sweetener used, the amount will vary. To make it easier for you to navigate, add an amount that is roughly equivalent to 100 grams of regular sugar. Wrap the resulting dough in foil and refrigerate for 30 minutes.

In the meantime, to prepare the filling, grind the curd through a fine sieve or chop in a blender. Add sweetener equivalent to 50 grams of sugar, sour cream, vanilla sugar, and starch. If necessary, the last ingredient can be substituted with wheat flour. Mix everything until smooth, avoiding lumps.

Sort out the black currants, rinse under running water and drain the water. Ideally, you need to let the berries dry out so that the filling does not turn out to be too liquid, but if you do not have that much time, then simply spread the currants on a towel and blot from excess moisture. Paper towels or napkins will do just fine.

Sprinkle a baking dish with flour, if necessary, first grease with a thin layer of butter. It is also convenient to use silicone muffin tins: nothing sticks to them, so there is no need to grease them first. In this case, you will get small portioned cakes. Use your hands to distribute the dough over the shape, forming sides about 4 centimeters high. Pin the bottom in several places with a fork.

Place the curd filling on the bottom and smooth with a spatula or spoon.

Pour the berries onto the cottage cheese, also smooth. You can additionally sprinkle with a small amount of starch, if the berries are very watery, then something resembling jam will form on the surface of the cake.
