Baking without flour and sugar raises doubts about the taste, because, as a rule, all the dough products we are used to include both. Although there is little use in such baked goods, there is a lot of gastronomic pleasure. In this recipe, we will try to break this belief and show that muffins with a “correct”, low-calorie composition can be no worse than traditional flour baking.

First, you need to soak the semolina in milk so that it softens and swells well before baking. To do this, place the semolina in a bowl and fill it with low-fat milk. Stir and leave the mixture on the table. While the cereal is infused, let's prepare the dough. To do this, we divide the eggs into yolks and whites. Put the yolks in a separate bowl along with the cottage cheese. Add vanilla extract, honey and mix with a fork until smooth. It is convenient at this stage to use a mixer - it will break the curd lumps faster and make the mass more homogeneous.

Beat the remaining proteins with a pinch of salt with a mixer until a dense foam is obtained.

Pour baking powder on top of the curd-yolk mixture and spread the semolina with milk, which has already softened a little. Mix both masses with a spoon. Then add the lemon zest, whipped egg whites and mix them into the dough in a circular motion.

It is convenient to use silicone molds for baking muffins. It is not necessary to lubricate them, and then it is very convenient to remove the finished products from the silicone "baskets". If the molds are made of a different material, then we coat them from the inside with oil using a culinary brush - this way the oil layer will be minimal. We lay out the prepared dough in the forms, filling them almost to the top. When baking, the dough will not rise too much.

Preheat the oven to a temperature of 180 degrees. Place the molds with the dough on the wire rack and place them on the middle level of the already hot oven. Baking time is forty minutes. Depending on the specific oven, the time may vary slightly, so we focus on the golden brown crust and “cap” on the muffin's surface. When the items have risen and are completely covered with blush, you can take them out. These muffins can be served both warm and cold. Additionally, for sweetness, you can sprinkle them with honey or fruit puree.
