Transparent pear jam in slices for the winter

Pear is a juicy and tasty fruit that has many beneficial properties and contains a large amount of vitamins. The pear is harvested for the winter in the form of jam, compote, preserves. For the preparation of transparent amber-colored jam, it is necessary to choose hard varieties of pears so that they retain their shape during the heat treatment. A small amount of lemon zest will give the jam a pleasant citrus aroma, and citric acid will give a slight sourness so that the jam is not cloyingly sweet.

In order for the jam to turn out into slices in a transparent syrup, we chose a hard pear. We wash them under running water, put them on a kitchen towel and let them dry from the water for 15-20 minutes. Then we cut the pears in half, remove the core and stalks. Cut the pears into medium-sized wedges.

Pour sugar into a saucepan with a thick bottom and add water.

Put the saucepan over medium heat and, stirring occasionally, bring the syrup to a boil. Then we reduce the fire and cook the syrup until the sugar is completely dissolved.

Put chopped pears into the finished syrup, mix and cook the jam for 110-120 minutes, stirring it occasionally so that the jam does not burn to the bottom of the pan.

Rinse the lemon, then scald with boiling water. Dry with a towel and carefully remove the lemon zest on a fine grater.

At the end of cooking, add lemon zest and citric acid to the jam, mix, boil for 2-3 minutes and remove from heat.

We put the finished hot jam on pre-sterilized jars, seal with boiled lids and turn the jars upside down. We leave the jam until it cools completely at room temperature, after which we put it in a cool dark place for storage. We left a little jam for tasting, a pleasant tea party!
