Transparent jam from ranetki with a tail for the winter

The apples are pierced with a wooden stick and boiled in three rounds in sugar syrup with citric acid. Then hot jam is poured into sterilized jars and rolled up. It turns out to be very tasty and of a beautiful amber color.

We select whole apples without damage, rinse them well under running water, dry them on a paper towel and pierce them with a toothpick in the place where the tail is.

Let's start preparing the syrup. Pour granulated sugar into a deep saucepan and fill it with drinking water. We put on a low heat and cook until the sugar is completely dissolved.

Now add citric acid. The syrup should begin to actively bubble. Stir and continue cooking until it becomes transparent.

We send ranetki to our sugar syrup and cook them for 10-13 minutes over medium heat.

Remove the container with jam from the stove and put a clean plate on the apples. We set a jar of water on top to make it look like a load. This is necessary for the ranetki to bathe in syrup. We leave in this way for 11-12 hours.

Remove the jar and plate and bring the jam to a boil over low heat. Next, remove the pan from the stove and let it stand for 10-12 hours to cool completely. We repeat this step two more times.

After the third time, pour hot jam into sterilized jars and roll them up tightly with lids. We wrap everything in a blanket or towel and leave it to cool completely.
