It is a little more difficult to prepare transparent jam from apples of the well-known variety "White filling" than from other varieties. These apples ripen quickly and their texture becomes crumbly. In order for the apple slices to retain their shape in jam, they must first be soaked in a solution of salt and baking soda, then soaked in sugar syrup and cooked in three steps with a break for cooling. These apples are sweet on their own, so you can add less sugar than the standard 1: 1 ratio.

Dissolve salt in one liter of water and fill apples with this solution for 10 minutes. Then we drain the solution, rinse the apples and fill it with a second liter of water, dissolving soda in it. We insist the apples in the soda solution for another 10-15 minutes, then drain the water and rinse the slices again.
After this time, bring the dishes with apples in sugar syrup to a boil over low heat and cook for 5 minutes. Turn off the fire and leave the jam until it cools completely and for at least 4 hours. Then cook the jam 2 more times over low heat for 5 minutes from the beginning of the boil and with a break for cooling. As a result, the apple slices will become transparent and retain their shape.
