If you run out of eggs at home, or you are fasting, this is not a reason to give up homemade pancakes. You can cook them without eggs, and they will turn out fluffy and airy - no worse than butter. Knead the dough on kefir with dry yeast, let it fit well and fry in a sufficient amount of vegetable oil. We will serve hot donuts with sour cream, jam, honey - the homemade ones will definitely like it!

We heat kefir on the stove or in the microwave until warm (36-40 degrees) and pour into the dry mixture. Vigorously mix everything together with a whisk to get a homogeneous dough without lumps. The consistency of the dough turns out to be slightly viscous, similar to thick sour cream. Tighten the bowl with the prepared dough with cling film or cover with a clean kitchen towel and put it in a warm place for proofing. After approximately forty-five to fifty minutes, the dough should double in volume, and air bubbles will appear on its surface. Now you can fry the pancakes.
Pour such an amount of odorless vegetable oil into the pan so that it covers the bottom with a layer of one and a half to two centimeters. We heat the oil until hot. We collect the cooked dough from the edge of the bowl and put it in the pan in the form of small pancakes. Leave a small distance between the pancakes, as they grow in size during frying. Maintain the temperature of the stove medium-low, close the pan with a lid. Fry the pancakes on one side until the crust is browned underneath.
