Lush yeast pancakes on kefir with apples

We offer a recipe for simple yeast pancakes. Their peculiarity is that we will knead the dough based on kefir. And yeast dough on kefir always turns out to be a little more fluffy than on milk - this is a huge plus for pancakes. Let's also add apples. So that their sufficiently moist pulp does not weigh down the dough, we cut them into cubes, and not three on a grater.

First, we activate the yeast. To do this, place the kefir in a cup or small bowl and heat it in the microwave until it is warm. Pour dry yeast into it, also a teaspoon of sugar from the total amount and mix thoroughly until all the granules dissolve. We leave the mass in a warm place for twenty to thirty minutes, until foam forms on the surface. The volume of the mass should increase markedly.

Sift flour in the specified amount into a bowl, add the remaining granulated sugar, a pinch of salt. We break the egg and pour in the kefir-yeast mass.

Vigorously mix everything together with a whisk to get a homogeneous dough without lumps. The consistency of the dough is similar to thick sour cream.

Tighten the bowl with the prepared dough with cling film or cover with a clean kitchen towel and put it in a warm place for proofing. Approximately in forty to fifty minutes the dough should double in size, air bubbles will appear on the surface.

We wash the apples, dry them and cut them into four parts, remove the seed capsule. Cut the fruit pulp into small cubes. Pour them into the suitable dough, mix gently with a spoon.

We leave in a warm place for another fifteen to twenty minutes, so that the dough comes up a little more.

Pour such an amount of odorless vegetable oil into the pan so that it covers the bottom with a layer of one and a half to two centimeters. If there is not enough oil, then there is a risk that the pancakes will not bake and remain too moist inside. We heat the oil until hot. We collect the cooked dough with apples with a tablespoon from the edge of the bowl and put in the pan in the form of small pancakes. Leave a small distance between the pancakes, as they grow in size during frying. Maintain the temperature of the stove medium-low, close the pan with a lid. Fry the pancakes on one side until the crust is browned underneath. Then turn the pancakes over with a spatula to the other side and continue to fry without a lid until they are browned from below.

Remove the fried foods from the pan and put them on a paper towel so that it absorbs excess oil after frying. Then transfer them to a serving plate.
