A very simple recipe for delicious fluffy pancakes with sour cream that just melt in your mouth. It is advisable to use sour cream with a fat content of 20% and above - this has a positive effect on both the taste of the crumpets and their airiness. We recommend frying the pancakes in a non-stick frying pan with a small amount of vegetable oil - this way you get an even golden brown crust, and the finished products do not come out too greasy.

Break eggs into a bowl, add salt and granulated sugar. Mix vigorously with a whisk. Most of the sugar crystals should dissolve.

Next, put sour cream in the egg mass and mix thoroughly. An important point - sour cream should be at room temperature. If the food is cold, the crumb can be dense and heavy.

Then sift the flour over the kneaded mass. Mix thoroughly with a whisk until a smooth, uniform, medium-thick dough is obtained. It should have such a consistency that the mass flows down from the rim in a soft stream, and spreads slightly below.

Finally, pour soda onto the surface of the dough and mix thoroughly again so that it is well distributed throughout the mass. Let the finished dough stand for twenty to twenty-five minutes before frying.

Pour a small amount of odorless vegetable oil into a frying pan with a non-stick coating, distribute it along the bottom and heat it well on the stove. We collect the cooked dough with a tablespoon and put it in the pan in the form of small pancakes, leaving a small distance between them. We keep the temperature of the stove medium-low, do not cover the pan with a lid. Fry the pancakes on one side for one and a half to two minutes, until the crust is browned from below.

Turn the pancakes over with two scoops to the other side and continue to fry until they are browned from below. When frying, they increase in size - this is clearly visible in the process.

Remove the fried pancakes from the pan with a spatula and place them on a paper towel so that it absorbs the oil from the surface. Place the dried products on a serving plate. Fry the rest of the dough in the same way, if necessary, add additional vegetable oil to the pan. Serve hot pancakes with sour cream, jam, condensed milk, honey, nutella or simply sprinkle with icing sugar.
