I want to share, in my opinion, a recipe for fluffy pancakes cooked in yogurt with soda. The fermented milk ingredients give the baked goods an incredibly delicate texture. Fritters are a great and quick option for a delicious family breakfast.

In a deep bowl in which you will knead the dough, pour in the natural yogurt preheated to a warm state, then add salt, the required amount of granulated sugar and baking soda. You can use any yoghurt - fruit, natural, Greek or drinking.

Add vanilla sugar to taste and mix thoroughly using a whisk. The baking soda will react with the fermented milk product to form a characteristic foam.

Introduce wheat flour previously sifted through a fine sieve in several steps. Stir the dough thoroughly until a homogeneous mass is formed and the lumps disappear completely. Then pour in the required amount of boiling water and mix well with a whisk.

Heat a skillet with a thick bottom well over maximum heat. Then grease with a little vegetable oil. Gently place the dough at a short distance from each other. Reduce heat to medium.

When the sides of the pancakes are covered with a uniform crust, and the dough on top grasps well and thickens, using a spatula or two forks, turn the pancakes over to the other side and fry until an appetizing golden brown crust.

Place hot pancakes on a platter or large plate.
