Lush dumplings on kefir with strawberries

In the strawberry season, you can not only cook jam from berries, but also make preparations with it in the form of dumplings and freeze them. Such a semi-finished product is stored in the freezer for up to 3-4 months. After boiling in a double boiler, dumplings are soft, fluffy and do not lose the aroma of berries. Cooking time: 1 hour 15 minutes. Servings: 3.

Bring kefir to room temperature in advance. Sift flour through a sieve into a deep bowl, make a depression in the center. The dough may take a little more or less flour, it depends on the quality of the flour and the gluten content in it. However, it is not worth it to clog the dough with flour too much.

Break an egg into a depression in the flour, throw in a pinch of salt, pour out kefir and add soda. Mix everything thoroughly.

Knead the dough for 5 minutes, it should not be too tight. Then cover the bowl with the dough with a towel and leave to ripen for about 20 minutes.

Remove the tails from the strawberries, discard the damaged berries, wash and cut the strawberries coarsely into cubes.

Dust the table with flour, put the dough from the bowl, sprinkle it on top with a small amount of flour. Roll out the dough with a rolling pin to a thickness of about 1 cm. Using a suitable cutting or glass, cut out circles from the dough, into which the filling will subsequently be wrapped. You can roll out the dough on a silicone mat, it is easier to wash, the table will remain as clean as possible.

Put about 1 tsp in the center of the dough circles. sugar and cubes of berries. The amount of sugar can be adjusted according to preference.

Fold the dough circles with the filling in half and pinch the edges (you can twist it with a pigtail, walk along the edge with the teeth of a fork, or leave the edges just straight).

Such blanks can be frozen or boiled immediately. To do this, you can use a multicooker or a steamer, or you can take a metal steamer. The bottom should be covered with 2-3 layers of gauze to prevent sticking. Pour water into a saucepan so that the bottom of the steamer does not touch the surface of the water.

Put the dumplings in 1 layer, bring water in a saucepan to a boil, cover the steamer with a lid. Steam for about 5 minutes. over high heat. If the dumplings are not large, the cooking time can be reduced. Serve with butter and sour cream.
