This muffin recipe is perfect when you need to quickly prepare something for tea. The cupcake can be made as one large or small. The delicate soft dough on the inside and crisp on the outside is just something incredible.

Mix all dry ingredients thoroughly in a separate container.

While continuing to beat the egg-mayonnaise mixture at low speed, add a few tablespoons of dry ingredients. The dough will be the consistency of thick sour cream. If desired, you can add chopped nuts, chocolate, dried fruits or cocoa to such a dough, but in this case, you will need a few tablespoons less flour.
