Rinse the apples thoroughly under running water and peel them after drying them with a towel. Inspect for dented or darkened casks. If necessary, carefully cut them with a knife, also get rid of the core with seeds, and cut the remaining pulp into small cubes. Place the apples in a saucepan. If desired, you can sprinkle them with lemon juice, so they will not oxidize and darken, and after canning, the taste will be richer.
Pour apples with water and place over medium heat. Bring the liquid to a boil and cook until the pieces soften, stirring occasionally. On average, this will take about 10 minutes, depending on the size of the apples. At this stage, you do not need to boil them completely, inside they should still remain harsh.
