Zucchini stew with minced meat

A minced meat stew is a good idea for lunch or dinner. An excellent combination of tender homemade minced meat with a large variety of juicy vegetables, which give a lot of juice during cooking. The stew turns out to be simply excellent - tender, juicy and very appetizing!

Before starting cooking, we will prepare all the products so that later all the ingredients can be quickly added to the pan. We wash the zucchini under running water, remove the stalk and peel them. Cut the courgettes into small cubes. We clean the carrots, wash and rub on a coarse grater. Peel onions and garlic, rinse and chop into small cubes. We wash the bell pepper, remove the stalk and seeds and chop it into thin strips.

We wash the tomatoes, cut them in half lengthwise and rub them on a coarse grater. This is very convenient, as the tomato skin will remain in your hands and will not end up in the stew. If you want to grind a tomato with a blender, you first need to cut the tomato's nose crosswise and lower it in boiling water for 30-40 seconds. After that, the skin is easily separated from the tomato without pulp.

Put the onion in a preheated pan with vegetable oil, sauté it for 2-3 minutes, then add the carrots, mix and fry the vegetables for another 3-4 minutes. Then add tomato puree to the pan and let the mixture boil for 5-7 minutes. Then add zucchini and bell pepper to the vegetables. Mix well and leave the vegetables to simmer for 2-3 minutes, then remove the pan from the heat.

Put the minced meat in another preheated pan with vegetable oil and fry it until browned.

When the minced meat is browned, we send it to the pan with vegetables, add sour cream, salt and spices, mix all the ingredients. We close the lid and simmer the vegetables for 20-30 minutes. Add chopped garlic to vegetables 10 minutes before readiness.

Remove the finished stew from the stove and place on portioned plates. Sprinkle with chopped fresh herbs and serve. Bon Appetit!
