We wash all vegetables and herbs with water and let them dry slightly. Cut the leek into rings.

Peel and rub the carrots on a coarse grater. And put the carrots and onions in the pan.

Cut the courgettes into cubes and mix them with carrots and onions.

Cut the champignons into thin slices.

We send the mushrooms to the pan, pour in the vegetable oil and add 1-2 tbsp. spoons of water. We put on a moderate heat and simmer for 30-35 minutes. until vegetables are ready.
