Diet vegetable stew

A quick option for making a dietary vegetable stew is a good choice as a dinner for those who preserve their figure and value their time. Even someone who has never cooked anything more complicated than scrambled eggs will cope with the dish.

Ingredients

Cooking process

step 1 out of 5
Wash vegetables. Peel and wash the carrots and garlic, remove the skin from the zucchini, remove the pulp and seeds. Wash greens and shake off liquid. Get the seed boxes from the peppers together with the seeds and partitions, wash the peppers.
step 2 out of 5
Prepare a wide, thick pan for cooking. The vegetables will need to be cut into small cubes so they cook faster. First you need to cook vegetables that take more time to cook, then those that do not require a long heat treatment. Heat a frying pan over medium heat, pour in vegetable oil (sunflower, and preferably olive). Put the carrots cut into small cubes in a frying pan, stir and fry for about 3-4 minutes. Then cut the celery stalks into 4 pieces in length, then finely chop. Add celery to carrots and fry for about 2 minutes.
step 3 out of 5
Then add chopped onions to the vegetables, increase the heat, mix everything so that the excess liquid evaporates better. Simmer for about 3 minutes, then reduce heat. Chop the peppers into small cubes, add to the pan. At the end, add chopped garlic and small zucchini cubes.
step 4 out of 5
Add chopped cilantro to the stew at the end and stir. The salt in the dish will be superfluous, as well as additional seasonings.
step 5 out of 5
Serve the vegetable stew immediately after cooking, spreading over portioned plates.

Bon Appetit!
