Pickle without tomatoes for the winter

This is a recipe for those housewives who do not put tomatoes and tomato paste in the pickle. You are encouraged to replace tomatoes with bell peppers. A pickle is being prepared based on pickled cucumbers and with the addition of pearl barley.

Soak the pearl barley in cold water overnight. Put the pearl barley to boil and take care of the vegetables. Peel and chop the onion into small cubes. Heat vegetable oil in a cauldron (saucepan) and fry the chopped onion in it until transparent.

Grate peeled and washed carrots or chop into thin cubes. Transfer it to a cauldron and fry with the onions.

Chop the pickled cucumbers into small cubes, transfer to a cauldron, mix with onions and carrots and simmer for 7 minutes.

Peel sweet peppers from seeds, wash and grind to a puree state using a meat grinder or blender. Transfer the pepper puree to the vegetables.

During this time, the barley has already been cooked. Add it to the pickle.

Pour cucumber pickle filtered on a sieve into this mass. Mix everything well and taste the dish for salinity. You can add salt to your liking. The brine will give the pickle the desired sourness and pungency.

Rinse the green parsley and dill, chop finely and add to the pickle.

Simmer the workpiece over low heat for 30-40 minutes, stirring it regularly. At the end of stewing, add vinegar to the pickle. It is needed for the reliability of conservation. Put the hot pickle solution (do not turn off the fire under the cauldron) in pre-sterilized jars and roll them up with sterile lids. Then turn the cans over and cover with a terry towel. Transfer cooled jars with pickle without tomatoes to storage in a cool place, but they can be stored at home.
