Pickle without vinegar for the winter

It is very convenient to have several jars of pickle in stock. After all, there are often days when there is little time for cooking, but you need to feed your family. This is where this kind of blank comes in handy. In addition, pickle rolled up for the winter has a particularly rich taste, and the ready-made soup turns out to be very tasty and aromatic. We do not use vinegar for pickle, it is already perfectly stored during the winter.

Thoroughly rinse the pearl barley under running water.

The washed barley must be soaked for several hours before cooking. This will make it softer and looser, and shorten the cooking time. We place the washed cereal in a bowl and fill it with water so that the pearl barley is completely covered with a layer of liquid.

After three to four hours, the pearl barley will noticeably swell, absorbing some of the moisture.

Rinse the groats thoroughly again under running water.

Place the prepared barley in a saucepan and fill it with 500 ml of water. Place the pot on the stove and bring the liquid to a boil.

You do not need to cook the barley until fully cooked. The task at this stage is to completely evaporate all the liquid.

Peel and wash onions and carrots. Carrots need to be grated on a coarse grater, onions - cut into small cubes. In a frying pan, heat the vegetable oil in the specified amount and pour the chopped vegetables into it.

Fry the onions and carrots for five to seven minutes over medium heat.

Slightly squeeze the pickled cucumbers with your hands from excess juice and rub on a coarse grater. Alternatively, you can cut it into small cubes.

Add chopped cucumbers and tomato paste to the pan.

Mix the mass, close the lid and simmer for five minutes.

Add prepared pearl barley to the vegetable mixture and mix.

Pour water into the pan in such an amount that the mass is completely covered with liquid. Also, at this stage, add the pickle to taste and add black ground pepper.

Simmer the mixture for seven to ten minutes at low temperature.

We wash the cans with soda solution and process with boiling water. Boil the lids in water for a couple of minutes. Let the jars and lids dry completely. We lay out the boiling pickle in the prepared jars and immediately roll up the lids. We wrap the blanks with a blanket and in this position let them cool slowly. We store the pickle in a cool, dark place. To make a soup, you just need to add a jar of such a blank to a pre-cooked meat or vegetable broth.
