The traditional version of the preparation of pickle contains sour cucumbers. Today we offer you a recipe for pickle made from green tomatoes, which will come to your aid at the moment when you urgently need to cook dinner, and this option simply cannot be replaced! By taste, green tomatoes can easily replace sour cucumbers, tomato paste will successfully complement their taste, as a result, you will get a ready-made pickle in a jar.

We wash the pearl barley in running water, then fill it with clean running water in a 1: 2 ratio and leave it for 8-12 hours. Peel the onion, rinse and soak in cold running water for 5-10 minutes. Then chop the onion into small cubes. We clean the carrots, wash and rub on a coarse grater. Pour vegetable oil into a deep saucepan and put it on fire. Put the onions and carrots in the heated oil, stir and simmer for 10 minutes.

We wash the green tomatoes under running water, put them on a towel and leave them for 10-15 minutes to dry. Then cut the tomatoes into small random pieces. Add the tomatoes to the pan to the onions and carrots, stir and simmer for 20 minutes.

Drain the pearl barley, rinse with running water again and add to the pan to the vegetables, pour a liter of water, stir, close the pan lid and leave everything to simmer for 30 minutes. After the time has elapsed, add salt, sugar, tomato paste and spices to the vegetables, mix and continue to simmer for 10 minutes.

Then add vinegar, stir, simmer for another 5 minutes and remove from heat.

We lay out the finished pickle in sterilized jars, tighten with boiled lids and turn the jars upside down. We cover the jars with pickle with a warm blanket and leave them until they cool completely, after which we put them in a cool dark place for storage.
