Pickle with meatballs

This version of the pickle is prepared quite quickly, since meatballs are added instead of meat. It turns out no less satisfying and tasty, and you can save time. In addition, the meatball option is usually always liked by children.

We pre-prepare the necessary products: we wash the rice until clear water, peel and cut the potatoes into small cubes, rub the peeled carrots on a coarse grater, also rub pickled or pickled cucumbers on a coarse grater. Peel the onion and cut into small cubes. Put rice, potatoes in a saucepan with water and bring to a boil, cook at low temperature.

While the rice and potatoes are boiling, heat the oil in a skillet and fry the onions until translucent. Add carrots and continue to brown until light golden brown for 5 minutes. For flavoring, you can add garlic passed through a press to the sautéing, if desired. Do not forget to stir.

Add the sautéing to the pot to the rice and potatoes.
Put the minced meat in a bowl, add salt, pepper and mix well. Form small meatballs the size of half a walnut. For convenience, you can moisten your hands with water: the minced meat will not stick to your hands, and the meat balls will be smoother.

Gently dip the meatballs into a saucepan with soup.

Add the grated cucumbers, mix and, if necessary, add salt to the soup.

After adding the meatballs and cucumbers, bring the soup to a boil again and cook for five to six minutes. At the end of cooking, add finely chopped greens.
