Pickle with mushrooms

Despite some leanness of this dish, pickle with mushrooms is very useful and nutritious, since pearl barley and mushrooms are an excellent source of protein. The addition of barley and pickles remains a classic in this recipe.

First, you should rinse the pearl barley and soak it overnight (if this is not possible, let it stand for at least 2 hours). Due to the fact that barley absorbs moisture and grows in size when soaked, it becomes soft and juicy as a result of cooking.

Place the porridge in a saucepan, fill it with water and put it on low heat. The presoaked porridge will cook for about 40-50 minutes. Make sure that all the liquid does not boil away, add hot water to the pan if necessary.

Peel the potatoes, rinse well and cut into slices. Put chopped potatoes into another pan, collect hot water and put on the stove.

When the barley porridge is ready, remove it from the heat, filter it and send the already boiled porridge without water to the pot to the potatoes.

Let's start preparing the frying. Vegetables should be peeled, washed and chopped. Carrots can be grated, and onions can be cut into small cubes.

We put a frying pan with vegetable oil to warm up and, first of all, put chopped onions in it. It must be fried until soft. Then add the stew and carrots.

Wash the mushrooms, cut them into plates and send them to the frying pan. Let all ingredients simmer for 3 minutes.

Let's move on to pickles. Cut them into cubes or grate them. Put chopped cucumbers with the rest of the vegetables in the pan. Mix cucumber pickle with tomato paste and pour over the frying. Mix everything, simmer for 5 minutes, so that some of the liquid evaporates.

As soon as the frying is cooked, place it in a saucepan with potatoes and pearl barley.

The last step in cooking is adding seasonings. Try pickle, if it lacks salt, add salt. Season with pepper, oregano and cardamom if desired. This will give the pickle a richer flavor and aroma. Let it brew for 10 minutes.
