Pickle with barley and pickles for the winter

I propose to cook pickle with barley and pickles for the winter. Winter preparation turns out to be simple to prepare and helps out perfectly when there is no time for cooking, you just need to warm it up by adding it to the meat broth.

Ingredients

Cooking process

step 1 out of 9
Rinse the barley thoroughly several times, then cover with cold water and cook over medium heat. Peel the onions, rinse and chop finely. Put the prepared onions in a deep container with a thick bottom, after adding the required amount of vegetable oil. Place over medium heat and brown lightly.
step 2 out of 9
Wash the carrots thoroughly, peel with a vegetable peeler, grate on a coarse grater and add to the container to the fried onions. Stir well and cook for a few minutes.
step 3 out of 9
Cut the pickles into medium cubes and add to the fried ingredients.
step 4 out of 9
Wash the bell peppers and peel them of seeds and core. Wash the tomatoes well, make a cross-shaped incision, pour boiling water for a couple of minutes, then transfer to ice water, carefully remove the skin and cut the stalk. Grind the peeled vegetables with a blender until smooth, and then add to the rest of the ingredients.
step 5 out of 9
Add the prepared barley to the container with vegetables. Stir and cook for about 25-30 minutes after boiling again.
step 6 out of 9
Then pour in the cucumber pickle and salt if necessary.
step 7 out of 9
Rinse parsley and dill thoroughly and dry, chop finely and add to the workpiece. Mix thoroughly.
step 8 out of 9
5 minutes before cooking, pour in the required amount of vinegar and mix well. Prepare jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or boil in a saucepan for about 5-7 minutes.
step 9 out of 9
Remove the hot pickle from the heat, carefully put it in sterile jars, and screw with sterile lids. Turn the pickle jars upside down. Leave in this position until completely cooled, wrapped in a warm blanket. Then turn the cooled jars over and transfer to a cool, dark place for storage.

Bon Appetit!
