Pickle with pickles and tomato paste for the winter

Pickled cucumbers with tomato paste add a pleasant saltiness and sourness to the preparation. It is these ingredients that make pickle soup different from other soups. You will make a fragrant soup from such a roll in a matter of minutes and feed the whole family.

Ingredients

Cooking process

step 1 out of 8
Rinse the barley and soak in cold water for 6 hours. Put it to cook for 25 minutes, and in the meantime, pour oil into the cauldron (pan), heat well and add finely chopped onion. Fry until transparent.
step 2 out of 8
Grate the peeled carrots and add to the onion. Stir and cook for 3 minutes.
step 3 out of 8
Chop the pickled cucumbers into small cubes and add to the frying and simmer for 8 minutes, stirring for periods.
step 4 out of 8
Cut the stalk of the pepper, take out the seeds and scroll it through a meat grinder. Stir it with tomato paste and place in a cauldron.
step 5 out of 8
Strain the pearl barley and add to the rest of the ingredients. Mix everything and cook for 10 minutes, stirring occasionally.
step 6 out of 8
Using a sieve, pour the brine into the workpiece, mix and taste. Thanks to the brine, the salt is already in the dish, but if you want a more pronounced salinity, add salt.
step 7 out of 8
Rinse the greens, shake off the water and chop finely. Add it to the frying, stir and keep on low heat for another 10 minutes.
step 8 out of 8
Pour in the vinegar and divide the soup dressing into sterilized jars. Roll, turn and cover with a blanket for 8 hours.

Bon Appetit!
