Pickle with tomato paste for the winter

The rolled pickle with tomato paste dressing, pearl barley and cucumbers is prepared in order to then be able to prepare a delicious aromatic soup without unnecessary hassle. Pickle from such a blank turns out to be moderately sour, nourishing and rich, especially if you cook it in fatty pork broth.

Rinse the pearl barley in several waters, add water, lightly salt and put on medium heat. After boiling, reduce the heat and cook the cereals until tender. Drain the water through a sieve.

Wash the vegetables. Grate cucumbers. Cut the onion into half rings, and grate the carrots.

Mix onions, cucumbers, carrots, salt, vegetable oil, granulated sugar and tomato paste. Put everything in a saucepan and cook for about 40 minutes. Then put the pearl barley, cook for another 5 minutes, pour in the vinegar and mix.

Spread the pickle in sterile jars, roll up. Turn over and wrap with warm towels. When the workpieces have completely cooled to room temperature, they can be stored in a shaded, cool place.
