Today I want to advise you on a wonderful recipe for pickle for the winter. I prepare such a pickle every year, it is very convenient. In winter, when the day becomes less, you do not want to cook anything, and there is almost no free time, the pickle helps out perfectly.

First of all, rinse the barley thoroughly several times, then fill it with cold water and leave for a while. Meanwhile, wash the carrots thoroughly, peel with a vegetable peeler, grate on a coarse grater.

Wash the cucumbers thoroughly, cut off the ends and cut into strips.

Peel the onions, rinse and chop finely. This time I used a red bow.

Wash the tomatoes well, make a cruciform incision, pour boiling water over for a few minutes, then transfer to cold water, carefully peel off the skin and cut the stalk. Chop the peeled tomatoes with a blender until smooth or cut into small cubes.

Add vegetable oil, drinking water, granulated sugar and table salt to the container with ingredients. Mix thoroughly. Place over medium heat, bring to a boil, reduce heat, cover and simmer for about 20 minutes, stirring occasionally.

Then pour in the vinegar. Stir and simmer for about 10-15 minutes. Prepare jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes.

Remove the hot pickle from the heat, carefully place it in sterile jars, and roll up with sterile lids using a seaming machine.

Turn the pickle jars upside down. Leave in this position until it cools completely for about a day, wrapped in a warm blanket. Then turn the cooled jars over and transfer to a cool, dark place for storage.
