Peel the onion, chop finely and fry until golden brown in sunflower oil. Wash the zucchini, if necessary, cut off the thick rind and remove the seeds. Grate the zucchini and cheese on a coarse grater. ¼ set aside some of the cheese. In a bowl, combine onion, courgette, cheese, cooked rice, and eggs.
