Cottage cheese rolls with jam

A delicious delicacy that many remember from childhood. Delicate curd dough with juicy jam filling, baked until golden brown. The crumb turns out to be porous, slightly moist and flaky. We recommend choosing cottage cheese fatter, the baked goods will be tastier. The cooled cottage cheese rolls are well stored in a sealed container. And those who love them in a warm form can slightly reheat them in the microwave when serving, without losing their taste.

Ingredients

Cooking process

step 1 out of 9
In a wide bowl, in which we will knead the dough, sift the flour through a fine sieve. We also sift the salt with baking powder. Stir dry ingredients.
step 2 out of 9
Rub the butter on a coarse grater or cut into small pieces. Pour into a dry mixture. To prevent the oil from sticking to the grater when rubbed, we dip it periodically into the flour mixture. With dry hands, quickly grind the butter and flour mixture until fine crumbs are obtained. Next, put fat cottage cheese in the resulting crumb.
step 3 out of 9
We rub it with our hands again - a crumbly, loose, moist mass is obtained.
step 4 out of 9
Break the egg into this mass and shake it with a fork on the surface. Then we mix with a spoon into the base. Next, quickly knead with your hands a soft, but well-holding dough. We immediately divide it into two parts. We put each part in a plastic bag and send it to the refrigerator for one hour. Thanks to this step, the dough will become flaky.
step 5 out of 9
After cooling, put the dough balls on a work surface lightly sprinkled with flour.
step 6 out of 9
Roll each bun into a round layer with a rolling pin, adding more flour if necessary. We try to roll out a circle of the correct shape so that the bagels are beautiful and the same.
step 7 out of 9
We cut the dough into neat identical sectors. It is convenient to use a pizza knife for this purpose. Put a small amount of thick jam on each sector from the outside. We try to ensure that the filling does not protrude beyond the limits of the dough, otherwise it will burn during baking.
step 8 out of 9
We roll up the bagels, tucking the outer wide part upward inward, rolling it towards the inner narrow part. Grease the baking sheet with vegetable oil or cover with oiled parchment. Put the formed bagels on a baking sheet at a short distance from each other.
step 9 out of 9
We put a baking sheet with bagels in an oven preheated to 195 degrees. We bake them for about twenty minutes, until the crust is well browned. The rolls will grow noticeably when baked, but after removing from the oven, they may settle slightly - this is normal. Transfer the finished baked goods from the baking sheet to a serving plate. Sprinkle generously with powdered sugar through a strainer. Serve warm or cold.Store in a tightly sealed container.

Bon Appetit!
