If you want to diversify the menu, you can make chopped chicken thigh cutlets. The taste of such cutlets differs from ordinary chicken ones. They have more juiciness and texture, meat fibers are well felt. It is better to cook minced meat for such cutlets in advance, since it becomes much tastier if it is marinated for five to six hours. The meat is impregnated with spices and acquires a special juiciness. Ready cutlets are especially tasty with various sauces.

Separate the fillet from the chicken thigh. Remove the skin, remove the bone with a knife. Cut the resulting fillet by hand with a knife into small pieces. It is important to cut across the grain so that the finished cutlets are more tender.

Peel the onions, wash them, dry them and cut them into small cubes. Mix minced meat with chopped onions, egg, mayonnaise, salt and pepper mixture.

Add potato starch and mix everything together thoroughly. The consistency of minced meat is rather liquid, somewhat similar to pancakes. We tighten the dishes with the cooked cutlet mass with cling film and put it in the refrigerator for marinating for five to six hours.
