Chopped chicken cutlets with cheese

Tender chicken cutlets with cheese just melt in your mouth. We suggest not passing the chicken meat through a meat grinder, but finely chopping it with a knife - this will give texture and juiciness. To flavor the resulting minced meat, we use chopped dill greens. In order to emphasize the delicate taste of the already fried cutlets, we recommend serving them accompanied by a spicy sauce. It is prepared in a matter of minutes, and the mood of the meal will change significantly.

Any part of the chicken can be used to make cutlets. Bones, cartilage and skin are preliminary removed. Dry the resulting fillet with paper towels. Cut the chicken meat into small cubes with a sharp knife. It is important to cut across the fibers - this will make the cutlet pulp more tender.

Wash the dill and dry it. Throw away the tough stems. Chop the prepared dill finely. Grate the cheese with large holes. Put chopped minced chicken, egg, chopped dill, grated cheese, salt, black pepper, flour and mayonnaise in a bowl. Knead the minced meat with your hands or with a spoon. Let the mass stand for twenty to thirty minutes at room temperature for pickling.

While the minced meat is marinating, you can make the sauce. To do this, in a separate small bowl, mix mayonnaise, lemon juice, finely chopped dill, garlic, peeled and passed through a press, salt and black pepper. Mix everything thoroughly with a spoon. Keep the sauce in the refrigerator until the cutlets are served.

Heat a small amount of vegetable oil in a frying pan until hot. We form small cutlets from minced meat and fry them on medium-high temperature, for two to three minutes on each side. Leave the lid on the pan during frying to form a golden, crispy crust.

Transfer the finished hot cutlets from the pan to the dish and immediately serve until the cheese in the cutlets has lost its melted texture. Serve the sauce with the cutlets. Additionally, you can serve a salad of fresh vegetables and herbs.
