Chopped chicken schnitzel

If you need to quickly and easily prepare a hearty dinner, this recipe is perfect. Juicy and aromatic chicken schnitzel perfectly saturates and at the same time gives a real food pleasure. In order not to bother with a meat grinder, we make minced meat with a wide knife right on the cutting board, while mixing it with additional ingredients. We bake the formed schnitzels in a highly heated oven - this way the dish will remain low-fat and retain all its natural juices.

Free the chicken breast from skin, bone and cartilage. Place the resulting fillet on a large cutting board and chop it into small pieces using a large knife. It is worth noting that chicken meat is easily cut into small pieces if it is slightly frozen.

Peel the onions, wash, dry and cut into cubes. We also grind white bread in the form of small pieces. Place chopped onion and bread on a heap of chopped chicken breast, pour over with heavy cream and soy sauce.

Now add the rest of the flavoring ingredients, placing them on top of a slide on a board: dried carrots, paprika, cilantro, grated Parmesan cheese on a fine grater, salt to taste, black pepper.

Holding the knife by the handle and its opposite side, we chop a slide of all the components, trying to chop as much as possible and at the same time mix them. Within literally a minute, a fine-structured juicy minced meat is formed under the knife - everything is much easier than it might seem.

Divide the resulting mass into portions and form schnitzels with the flat side of the knife.

Lubricate the baking dish with a thin layer of vegetable oil and put the formed schnitzels into it. Apply a thin mesh of mayonnaise to the surface.

Preheat the oven to a temperature of 220 degrees. We put the schnitzel mold on the middle level of an already hot oven and bake for fifteen minutes. As soon as the schnitzels are browned around the edges, they are ready. It is important not to overexpose so as not to overdry.

We serve hot schnitzels to the table, accompanied by a salad of fresh vegetables and herbs. For piquancy, you can additionally serve lemon wedges.
