This is a classic way of making chopped chicken breast cutlets, starch and mayonnaise. You can create other delicious meat dishes based on this recipe by adding different ingredients to it. Corn, cabbage, mushrooms, carrots - everything to your taste. The ingredients include potato starch, which is not felt at all in cutlets. It is used for better gluing of "meat pancakes". The egg helps to achieve ruddy and appetizing crust, which will make the patties even more beautiful.

Rinse the chicken breast with cold water and pat dry with paper towels. We remove bones from the meat, if any, film and fat residues. Then we cut the piece lengthwise into thin plates, and they, in turn, into small cubes. The smaller the pieces are, the more uniform the minced meat and cutlets will be.

We transfer the chicken slices into a deep bowl, where we will prepare the base for the cutlets. We break two eggs there and mix everything well until smooth.

Then we send mayonnaise, pepper and salt to taste. Stir thoroughly.

Pour in the specified amount of starch, mix. At this point, the dough should be thicker and more sticky.

We wash the greens under running water, dry them and finely chop them into the dough, then stir.

Preheat a frying pan, pour vegetable oil into it and spread out the cutlet dough with a tablespoon, crushing it a little. Fry on medium heat until a golden brown crust forms on one side, and then turn over.
