Ryadovka is a group of mushrooms, both edible and inedible. The mushrooms themselves are not very attractive. Despite this, they are widely used in cooking, they are fried, pickled, salted, and also prepare various sauces and soups. Rows give the dish incredible taste and aroma. I propose to cook a pickled row with citric acid.

Sort out thoroughly, peel and rinse the rows in cold running water. Cut large mushrooms into several pieces. Put the washed rows in a deep saucepan and cover with cold water. Put on moderate heat and bring to a boil, then reduce heat and cook mushrooms for 30 minutes, stirring occasionally and skimming off the foam.

Wash and sterilize the jars in a convenient way. Pour boiling water over the lids or boil. Pour the cooked rows through a sieve or colander. Peel the onions. Prepare the marinade. Put bay leaf, coriander seeds, cloves, black peppercorns, allspice, ground cinnamon, onions, granulated sugar and salt in a saucepan.

Fill with the required amount of drinking water. Put on moderate heat and bring to a boil. Then reduce the heat. Place the rows in the marinade and cook for about 20 more minutes, then add citric acid. Stir and boil the rows in a fragrant marinade for another 5-7 minutes. Then remove from heat.

Spread the rows in sterile jars with a slotted spoon, fill with hot marinade, having previously filtered it through a fine sieve. Tighten hot jars with mushrooms well or roll up sterile lids with a seaming machine. Turn jars with rows upside down, wrap them in a warm blanket and leave to cool completely. Then move them to a dark place for storage.
