Fish salad for the winter with mackerel

Mackerel and vegetable salad can be easily made at home and does not require anything special. The composition of our salad is fresh vegetables, fish and spices. Having devoted no more than two hours to conservation, you will make delicious and natural preparations for the winter, which are much tastier and healthier than store-bought ones.

We wash the bell pepper under running water, put it on a kitchen towel and leave it for 15-20 minutes to dry from the water. Then we cut the pepper in half, clean it from the stalks and seeds and chop it into thin half rings.

Separate the head and tail of the mackerel, gut and rinse well in running water. Then cut into small pieces 3-4 cm wide and boil in boiling salted water for 15-20 minutes. We take the boiled mackerel out of the water with a slotted spoon and leave it to cool. Separate the cooled mackerel from the bone.

We clean and wash the carrots, rub on a coarse grater. Peel the onion, rinse and cut into thin half rings. Scald the tomatoes, peel and grind in a blender. Put the carrots, onions and peppers in a deep saucepan, sprinkle with sugar, stir and leave for an hour to let the vegetables juice. Then add tomato puree and vegetable oil to vegetables, mix and put on medium heat. Bring to a boil, reduce heat and simmer covered for 35-40 minutes. During this time, you can prepare the jars: rinse them with baking soda and rinse with water. Then sterilize in a convenient way.

After the vegetables are stewed, add boiled mackerel, salt and pepper, vinegar to them and mix well. Simmer vegetables for another 15 minutes, then remove the saucepan with salad from heat.

We lay out the finished salad in sterilized jars, tighten the lids tightly and turn the jars upside down. Leave it to cool completely at room temperature, then put it away for storage.
