I strongly recommend making a delicious and quite aromatic salad of beets "Alenka". This appetizer is truly a lifesaver when you want to cook rich and beautiful borscht in the least amount of time.

First of all, wash the tomatoes thoroughly, dry them, remove the stalk, and then pass them through a meat grinder or chop them with a blender.

Wash and dry the bell pepper. Remove the stem along with the seeds and core. Cut the peeled bell pepper into strips. Wash and peel hot peppers as well.

Peel the onions and rinse in cold running water, then cut into thin half rings.

Wash the beets thoroughly and then peel them with a knife or vegetable peeler.

Peel the garlic, rinse and cut into thin slices.

Grate the peeled beets on a coarse grater or use a Korean carrot grater. Place the grated beets in a heavy-bottomed saucepan.

Add hot pepper if desired. Prepare the jars, wash them well in warm water and baking soda, and then sterilize them in the microwave, oven, or water bath.

Pour boiling water over the lids or boil in a separate saucepan. Fill sterile jars with prepared salad and roll up with a seaming machine. Then turn the cans upside down and wrap them in a warm blanket. Leave in this state to cool completely for 8-10 hours, then turn the jars over and transfer to a cool place for storage.
