I strongly recommend making a delicious and quite aromatic salad of beets "Alenka". This appetizer is truly a lifesaver when you want to cook rich and beautiful borscht in the least amount of time.

Cooking process
Put a saucepan with vegetables over medium heat and bring to a boil. Stir the vegetable mixture, cover the pot with a lid and cook the vegetables over low heat for about 35-40 minutes. Add hot pepper if desired. Prepare the jars, wash them well in warm water and baking soda, and then sterilize them in the microwave, oven, or water bath.
Pour boiling water over the lids or boil in a separate saucepan. Fill sterile jars with prepared salad and roll up with a seaming machine. Then turn the cans upside down and wrap them in a warm blanket. Leave in this state to cool completely for 8-10 hours, then turn the jars over and transfer to a cool place for storage.
