The famous zucchini uncle bens salad is easy to prepare for the winter, as it is well stored and does not require expensive products. In our recipe, we suggest making your own tomato paste for pouring, but you can use a store-bought one.

Peel the onions and bell peppers. Rinse vegetables in running water and set aside.

Rinse the zucchini, peel and remove the middle with a tablespoon. Then cut the fruit into small cubes.

Place the washed tomato halves in a blender bowl and beat until puree, which then pour into a saucepan.

Place the puree in a saucepan, add sugar and salt, vegetable oil. Bring the mixture to a boil and simmer for about fifteen minutes from boiling. If you do not want to prepare a tomato filling, then replace it with tomato paste diluted with water until it becomes a liquid puree.

Cut the onion into small pieces. It is best to take a small onion, which you just have to cut in half.
