Caesar salad with squid

This Caesar Squid Salad recipe is the most successful and delicious of all seafood salads. For its preparation, it is important to properly cook the squid so that their meat does not become "rubbery". All other ingredients of the salad are classic.

Ingredients

Cooking process

step 1 out of 7
Scald the squid carcasses with boiling water and remove the skin. Then cut them into halves and remove all the insides. Boil the carcasses in salted water for 2 minutes, or just pour boiling water twice for 20 minutes, because the squid will become tough with prolonged cooking. Cut the finished meat into strips. Remove the crust from the loaf slices, cut into small pieces, place on a baking sheet and drizzle with olive oil. Dry the croutons in the oven for a few minutes at the lowest temperature.
step 2 out of 7
Squeeze the juice of half a lemon in any way.
step 3 out of 7
For salad dressing, place eggs in boiling water for 1 minute and refrigerate immediately.
step 4 out of 7
Peel the garlic, chop finely and grind with salt and black pepper. Place prepared eggs, garlic, lemon juice and any mustard in a separate bowl. Beat everything with a mixer at low speed, and then, while whisking, add olive oil in small portions. Your sauce should be like sour cream in consistency.
step 5 out of 7
Rinse green lettuce leaves with cold water, remove excess moisture with a napkin and tear into medium pieces.
step 6 out of 7
Put the lettuce leaves in a beautiful salad bowl, pour over the prepared dressing and mix gently.
step 7 out of 7
Then place the chopped squid and croutons on the leaves and pour over the rest of the dressing. Grate a piece of Parmesan on a fine grater and sprinkle Caesar with squid with it. You can serve the dish to the table.

Bon Appetit!
