Caesar salad is one of the most widespread and popular salads in the world. There are many options for its preparation. We present to your attention the version with shrimps and Chinese cabbage.

Since shrimps are used in the salad, they must be defrosted in advance. We wash the defrosted shrimps, clean them of debris and remove the heads. Next, prepare the marinade for the prepared shrimp. We mix olive oil, lemon juice, honey (it is better to use liquid), a little salt and seafood spices (optional). Place the shrimps in the marinade for 20-25 minutes.
Next, we prepare Beijing cabbage. To do this, wash the leaves, and then remove moisture from them with kitchen towels. To make the salad tastier and crisp pleasantly, it is recommended to place the Chinese cabbage leaves in the refrigerator or freezer for 30 minutes. The cooler the leaves are, the better.
For the sauce, boil soft-boiled chicken eggs (before boiling, it is advised to keep the eggs at room temperature for 30-60 minutes) and let them cool. Then put the olive oil, egg yolk, mustard and lemon juice into the mixing bowl. Mix all ingredients until smooth. As soon as the sauce begins to thicken, add balsamic vinegar, Provencal herbs and salt, pepper to taste.
When 10-15 minutes remain until the garlic sauce is ready, prepare the croutons. To do this, cut off the crust from white bread and cut into small cubes. Pour the bread cubes onto a baking sheet and send to brown in the oven at 180 ° C. Fry croutons prepared in the oven in garlic sauce preheated in a pan. As a result, we get delicious ruddy croutons with a pleasant garlic aroma.
