Donskoy salad with red tomatoes and cucumbers for the winter

Another favorite among winter salads for our family is "Donskoy" salad with red tomatoes and cucumbers. Such a salad goes well with hot meat dishes and will perfectly decorate your festive table, reminding you of the bright colors of summer.

Ingredients

Cooking process

step 1 out of 9
Peel the onions, rinse in cold running water, and then cut into half rings.
step 2 out of 9
Wash the tomatoes well under water, dry, remove the stalk and cut into rings.
step 3 out of 9
Wash and dry the cucumbers thoroughly, cut off the ends, and then cut into thin slices.
step 4 out of 9
Rinse the carrots well under cold running water, then, using a vegetable peeler, peel them. Grate the peeled carrots on a coarse grater or use a Korean carrot grater.
step 5 out of 9
Rinse and dry the bell pepper, then carefully remove the core with seeds, and cut into large pieces.
step 6 out of 9
Combine all vegetables in a deep metal container. Add the required amount of table salt, granulated sugar, and ground paprika, pour in the required amount of vinegar. Leave it for about an hour and a half for the vegetable juice to stand out. In the meantime, rinse the jars thoroughly in warm water and then sterilize in the oven or in a water bath.
step 7 out of 9
Fill the jars with vegetable salad, after mixing it. Spread the remaining vegetable juice evenly. Pour a tablespoon of calcined vegetable oil into each jar. Cover the jars with lids, and then place them in a saucepan, the bottom of which is previously shot with a kitchen towel.
step 8 out of 9
Pour warm water over the hangers of the jars, then put on medium heat and bring to a boil, then reduce the heat and sterilize the jars for 15-20 minutes. Gently remove the hot jars from the pan and screw them tightly with sterile lids or roll them up with a seaming machine.
step 9 out of 9
Turn the jars upside down, wrap them in a warm blanket, and leave in this position for about 12 hours until they cool completely, then turn them over and transfer them to a cool, dark place for storage. Serve the prepared salad on the table as an independent dish or in addition to hot dishes.

Bon Appetit!
