Such preparation for the winter, if necessary, can become both an appetizer and a side dish. The combination of rice with vegetables is not only delicious, but also very satisfying. If there is no time to cook, it is very convenient to just open a jar of such a salad and serve it immediately. The salad can be eaten both cold and hot. Adding vinegar is an optional step, but you need to remember that without vinegar, the workpiece can be stored no more than a couple of months, while with vinegar the salad will stand perfectly all winter.

Peel the carrots, wash and dry. Cut the root vegetables into small cubes. Pour vegetable oil into a large saucepan, add salt, granulated sugar and vinegar to it. Mix the mixture and put it on the stove. On the high temperature of the stove, quickly bring the prepared marinade to a boil and immediately lower the prepared carrots into it. Stir and lower the plate temperature to medium-low. Cook the carrots with constant stirring for five minutes.

Peel the onions, wash and dry them. Cut it into small pieces. Add the onion to the pan, mix with the carrots and fry for another five minutes. Wash the bell peppers and dry them. Cut each fruit in half and remove the seeds and stalks. Cut the pulp into small pieces, commensurate with carrot sticks. Add the pepper to the vegetable mixture, stir and cook for five minutes.

After the specified time has elapsed, add tomato juice to the vegetables, mix and continue cooking for five minutes. We wash the rice until transparent, fill it with water in a ratio of 1: 2 and put it on the stove. Cook the cereal until half cooked - it will take ten minutes. Add the half-cooked rice to the vegetable mass and cook everything together for twenty-five minutes.

Wash cans and sterilize in any convenient way. We do the same with the lids. Put hot salad in sterile dry jars and immediately roll up with sterile dry lids. Let the blanks cool completely and put them in a cool dark place for storage.
