Prepare all the ingredients you need to make your eggplant salad. Wash the ripe eggplants and bell peppers thoroughly. Peel the onions and rinse under cold running water.

Peel the bell pepper from seeds and core. Cut the peeled onions and bell peppers into half rings. Put chopped vegetables in a saucepan with a thick bottom, add the required amount of vegetable oil, table salt, tomato paste, vinegar and granulated sugar. Place over medium heat and bring to a boil.
