Broccoli salad with vegetables

Broccoli is a great vegetable that can be used for both hot meals and cold salads. Depending on the way of serving and the type of dressing, broccoli with vegetables prepared according to this recipe can be served as both a separate salad and an accompanying side dish.

Dip the broccoli in a bowl of warm water and leave it for a while to defrost.

Peel the onions, rinse and cut into small cubes.

We wash the carrots, peel and cut into thin cubes.

We wash the bell pepper, peel it from the stalk and seed box and cut into small pieces.

We take the broccoli out of the water, cut the large inflorescences into two or three parts.

We put the frying pan on the stove, pour in the vegetable oil and heat until hot. Put chopped onions in a pan, fry for a couple of minutes until transparent and add carrot sticks. Stir, close the lid and leave to simmer on the medium temperature of the stove for three to four minutes.

Add frozen peas and frozen green beans without defrosting. Pour in a small amount of water (two to three tablespoons), stir, close the lid and leave to simmer for two or three minutes.

Add pieces of bell pepper, prepared broccoli inflorescences, a garlic clove passed through a press, mix, cover and simmer for about five minutes.

Remove the pan from the stove and put the vegetables out of it in the salad bowl, trying to leave the liquid in the pan. You can serve hot broccoli with vegetables as a side dish, sprinkle with salt and pepper to taste. Or you can let the vegetables cool completely and season with olive oil, lemon juice and salt and pepper and serve as a salad. It is recommended to decorate the surface of the salad with a sprig of parsley.
